A chef with a passion for conscious eating is a rare find in this fast food-abundant, diet-obsessed, mindless consuming, guilt-inducing society. Seth’s approach is to utilize simple techniques to the highest quality food for the body, spirit and soul. A North Carolina native, he spent more than 12 years working in the restaurant and catering industry in Triangle, honing his culinary and hospitality skills. Having recently “awakened” to the very ominous global food and health issues afflicting the human race, Seth suddenly and dramatically decided to change directions. After spending nine months traveling across the country to learn about food production through the organization WWOOF (Willing Workers on Organic Farms) and intensive Permaculture Design Certification (PDC) courses, he returned to the Triangle to spend nine additional months further studying these topics until, BOOM! One day a holistic realization came into focus and he became aware of two basic truths. The first, everyone is bio-specific; that is to say, that everyone’s body has different needs and that one-size-fits-all solutions do not exist. The second realization was that those who can discern their own bio-specificity can use their diets as a powerful medicinal force. Seth’s food philosophy emphasizes locally sourced, high quality, seasonal ingredients. He reports that humans are inherently agricultural in nature, and that a person’s quality of health can be improved considerably by eating foods produced seasonally in the environment where the person happens to be.
